Strivin’ for Perfection

It all started with wanting to bring some sauce to Fort Wayne. Bravas Sauce specifically. If you have ever been to Spain there’s no way you left without eating some Patatas Bravas. They are everywhere and you should absolutely eat all of them. They’re so good.

Growing up, our family split the month of August between Barcelona and a little village in Galicia called Trabadelo. On our arrival to Barcelona it became pretty much a ritual to stop at the bar below Abuela’s apartment, La Garraffa, for a drink and of course, some Patatas Bravas. Little fried potatoes cubed up covered in a slightly spicy sauce. We used to long for those potatoes when we returned to the states. Somewhere between the ages of 12-14, I can’t really remember, our family would do our best to make Patatas Bravas here in Fort Wayne for dinner. Our dad grew up with the owner of La Garraffa, as it has been beneath my Abuelas apartement his whole life, and they very kindly gave us their recipe. I’ve tweaked it a bit to get it to taste like my favorite versions of the catalonian style Patatas Bravas.

In 2011, at 19 years old I thought Fort Wayne might be ready for some Bravas Sauce and opened up a hot dog cart to serve the people. We didn’t have access to a fryer that first year, however we made sure to adorn a lot of hot dogs with the sauce. We even top our signature dog, the Bravas Dog with potato sticks and bravas sauce showing respect to the dish that inspired the whole company.

In 2012 we opened our first Food Truck, which we still operate today, and hired on our first employees. We finally began serving up Patatas Bravas to Fort Wayne and that’s when things began to take off. In the past ten years we have been so lucky to work with incredibly talented people who have come through our doors and contributed to our success.

We recently closed our restaurant location and are working hard to build out a new location. You can find us these days roaming the streets of Fort Wayne in our OG food truck, slangin’ Patatas Bravas and probably having a good time doing it.
